Waste no time, get out there and try the "Poupeton, Crystal courgette flower stuffed with tomato basil sorbet, featuring a Catalan marinade of anchovies from Escala and matured olive oil": a sumptuous dish that's pretty as a picture, with the squash blossom petals standing up alongside various flavoursome ingredients. First it's a feast for your eyes, then it hits your palate. And you’ll have the same stupendous feeling with "Minced mature Galician blond prime rib baked in a Josper oven, accompanied by a daube and roughly chopped vegetables with truffle, spring onions in salt crust surprise, broth of stew with marrow and Japanese pearls. The prime rib is cooked to perfection in brief spurts at high temperatures. The desserts naturally live up to this great gourmet experience, being perfectly tangy. The "Delicately brittle fake Menton lemon, citrus bergamot and Japanese kumquat sorbet from Mas Bachès, lemon thyme cream, with sea salt shortbread" is well worth a mention, as the memory of its lingers on.
